One of the WebMaster's favorite foods is stews of any kind. We like this stew because instead of adding the potatoes to the stew, mashed potatoes are served on the side.

Step 1

Heat 30ml / 2 tbsp of the oil in a large saucepan. Add the onions and carrots and cook over a medium heat for about 8 minutes, until softened and lightly browned. Remove the vegetables with a slotted spoon, transfer to a plate or dish and reserve.

Step 2

Add another 15ml / 1 tbsp of oil to the pan and add teh beef cubes. Increase the heat and cook until browned all over. If necessary, fry the meat in batches to ensure it browns evenly. Season to taste.

Step 3

Return the vegetables to the pan and stir in the flour and the remaining oil. Cook, stirring constantly, for 1 minute. Add the beef stock, cofee, oregano and bay leaf. Bring to a boil and cook, stirring often, until thickened. Reduce the heat to very low. Cover the pan and allow to stew to simmer very gently for 1-11/2 hours until the beef is tender.

Step 4

Add the peas adn simmer for a further 5-10 minutes. Discard the bay leaf and taste and taste. Adjust seasoning as desired. Serve hot with mashed potatoes.

  • 4tbsp vegetable oil
  • 2 onions, chopped
  • 4large carrots, thickly sliced
  • 3lb braising steak, cubed
  • 3tbsp plain flour
  • 3cups unslated beef stock
  • 1cup strong black coffee
  • 2tsp dried oregano
  • 1 bay leaf
  • 4oz fresh or frozen peas (115g)
  • salt and black pepper
  • mashed potatoes, to server
