Curried Peanut Chicken Recipe


A unique and tasty appetizer that is easy to make.

Step 1

Preheat oven to 350ยบ F.

Step 2

Place chicken breasts in a shallow baking dish just large enough to hold them.

Step 3

Pour half and half over them and bake for 30 minutes. Let cool and cut into 1"cubes.

Step 4

Process mayonnaise, chutney, sherry, vinegar, curry powder and turmeric in a blender or food processor.

Step 5

Dip chicken pieces into the curry mayonnaise and roll in the chopped nuts.

Step 6

Refrigerate 30 minutes

Step 7

Arrange on a serving plate with fancy toothpicks.

Things You'll Need

  • 4each skinned & boned chicken breasts halves
  • 2cups half & half
  • 1 1/2cups mayonnaise
  • 3tbsp mango chutney
  • 2tbsp dry sherry
  • 1tbsp sherry vinegar
  • 2tbsp plus 1 tsp. curry powder
  • 1tsp turmeric
  • 2cups finely chopped salted roasted peanuts
