Strawberry Cheesecake Recipe

Step 1

Combine crust ingredients; press in 13"x9" pan. Cover and chill. Beat cream cheese, powdered sugar and vanilla until smooth. Fold in whipped topping. In small pan, sprinkle gelatin over water. Heat on low heat until dissolved, stirring occasionally. Stir in 1-1/4 cups puree. Fold into cream cheese mixture. Spread on crust. Cover and chill 4 hours. Garnish with dollops of whipped topping and strawberry fans; drizzle with whipped topping.

NOTES: You can substitute reduced fat/fat free cream cheese or whipped topping. This also makes a lot of strawberry puree. When i am in a hurry, I have used a 10 ounce package frozen, sliced, sweetened berries, partially thawed, to make the puree.

  • 1/3 cup butter -- melted
