Simple Pate Recipe

Step 1

Cover chicken livers with water, salt lightly and birng to boil. Draim immediately and rise livers in cold water until chilled thoroughly. Drain.

Step 2

Add marjoram. Puree livers with suitable machine or pass through a fine wire sieve.

Step 3

Add remaining ingredients and blend well. Taste and adjust salt. Serve well-chilled.

  • 2c Chicken livers, cleaned
  • 1/4ts Marjoram
  • 3/4c Sweet butter, room
  • -temperature
  • 1tb Brandy
  • 2tb Dry sherry
  • 2tb Chopped truffles (optional)
  • salt and pepper to taste
