Gingered Cabbage-Beet Salad Recipe

Step 1

Combine all ingredients except parsley sprigs. Cover & refrigerate overnight or up to 2 days. Garnish with the parsley sprigs & serve.

Things You'll Need

  • 1/2c Red onion, diced
  • 1/3c Red wine vinegar
  • 1/4c Safflower oil
  • 1/4c Parsley, minced
  • 1/4c Crystallized ginger, minced
  • 15oz Pickled beets, drained &
  • -- diced
  • 2c Sweet red cherries, pitted
  • 6c Red cabbage, shredded
  • Parsley sprigs
