Special Cornbread Recipe

Step 1

Combine dry ingredients; add tomatoes, onion, eggs and shortening, mixing well. Be sure to chop tomatoes before adding. Heat iron skillet in 400 degree oven until very hot, pour in the batter, and bake at 400 for 30 minutes or until brown.

Things You'll Need

1c Cornmeal
1/4c All purpose flour
2ts Baking powder
1/4ts Sugar
1/4ts Baking soda
1ts Salt
14 1/2oz Whole tomatoes, undrained
1 Medium onion, chopped
1 Egg, beaten
3tb Shortening, melted
