Overview

This spicy sidedish compliments any mexican entree!

Step 1

In a large skillet, heat the oil.

Step 2

Add the potatoes, green peppers, onions and seasonings.

Step 3

Stir and mix the ingredients carefully in the pan.

Step 4

Cover the pan and cook over medium heat for several minutes, watching to make sure the bottom does not scorch.

Step 5

Remove the lid, and carefully turn over the potatoes.

Step 6

Pat them gently until they are uniformly spread in the pan, and allow them to cook until they brown on the bottom.

Step 7

Carefully turn them again and allow the other sides to brown, until the potatoes are finished.

Step 8

Remove from the skillet with a slotted spoon and place on a plate or bowl lined with a paper towel.

Things You'll Need

  • 1 6 red-skinned potatoes (about 2 pounds), scrubbed and cut into 1/2-inch cubes
  • 1 1 green pepper, diced
  • 1 1 onion, diced
  • 1 2 tablespoons chili powder
  • 1 1 teaspoon garlic powder
  • 1 1 teaspoon salt
  • 1 1/4 cup CRISCO Oil
