This is cheesy soup made with bacon strips, chopped onion and American cheese is one of my very favorite soups. It looks complicated, but once you start cooking it's just a matter of adding ingredients as the soup cooks.
Cook bacon until crisp. Reserve 1 T. drippings. Saute onion in drippings. Stir in flour and salt. Gradually stir in water and broth. Bring to a boil. Cook and stir for 2 minutes until slightly thickened. Add rice.
Reduce heat, cover and simmer 5 minutes. Add milk, cheese, parsley and bacon. Cook till heated thru and cheese is melted.
