Zupa Migdalowa Recipe

Step 1

Heat milk just to simmering in a large saucepan. Add all the ingredients; stir until well mixed. Cook over low heat 3 to 5 minutes.

Step 2

Serve hot as is traditional for Christmas, or chill before serving.

NOTES: Almond Soup -- This recipe could be used as part of a 12-course meal known in Polish as Wigilia, or on its own. Wigilia is eaten after sundown on Christmas Eve. Serves 6-8.

  • 5c Milk
  • 1/2lb Almonds (blanched),
  • -finely ground
  • 1t Almond extract
  • 2c Rice, cooked
  • 1/3c Sugar
  • 1/4c Raisins or currants
