Zucchini Salad Recipe

Step 1

Trim the zucchini & cut into 1/4" thick slices. Combine slices in a pot with 2/3 c water, oil, hot pepper, cumin, black pepper & salt.

Step 2

Cook for 5 minutes until just tender-crisp. Cool & chill.

Step 3

When ready to serve, drain the zucchini. Combine the dressing ingredients adding salt & pepper to taste. Add to the zucchini, toss well & garnish with the parsley.

Step 4

Serve immediately.

  • 1 1/2lb Zucchini, washed
  • 4tb Olive oil
  • 1/4ts Hot red pepper
  • 1/4ts Cumin
  • 1/4ts Black pepper
  • Salt
  • 4tb Italian parsley, chopped
  • 1tb Vinegar
  • 3tb Olive oil
