Sicilian Eggplant Appetizer Recipe

Step 1

Cube eggplant, but don''t peel.

Step 2

Fry in olive oil in a skillet.

Step 3

In another skillet, fry the celery till it begins to brown & then add to eggplant.

Step 4

Pour tomato sauce into the empty skillet & mix in the vinegar, honey, olives, capers & pine nuts. Stir.

Step 5

As soon as they are blended, pour over eggplant, add salt & pepper & simmer 10 minutes.

Step 6

Add water if needed.Stir often. Allow to cool & then serve.

  • 4sm Celery stalks, diced
  • 4tb Tomato sauce
  • 4tb White vinegar
  • 1/2ts Honey
  • 4ea Green olives, halved
  • 4ea Black olives, halved
  • 4tb Capers
  • 1tb Pine nuts
  • 1/2ts Black pepper
  • Salt
