Eggplant Caviar Recipe

Step 1

Preheat the oven to 400 degrees.

Step 2

Place the eggplant on a sheet of aluminum foil and bake for 1 hour, or until the eggplant "collapses". Let cool. Remove the pulp. There should be about 3 cups.

Step 3

Add the onion, scallions, garlic, green pepper, tomatoes, olive oil, sugar, lemon juice and pepper. Serve with toast or crackers.

  • 1/4c Olive oil
  • 1/4c Onion, minced
  • 1ts Sugar
  • 1/4c Scallions, minced
  • 1tb Lemon juice
  • 1ts Garlic, minced
  • Pepper freshly ground
  • 1/4c Green pepper, chopped
  • 1c Tomatoes, diced
