Carrot-Raisin Rice Salad Recipe

Step 1

Combine rice, contents of seasoning packet and water in cooking pan.

Step 2

Bring to a vigorous boil. Reduce heat, cover and simmer until water is absorbed, about 5 minutes.

Step 3

Cover and quickly cool in shallow pan.

Step 4

Add carrots, celery, raisins and onions.

Step 5

Combine mayonnaise, sour cream, and lemon juice. Stir into the rice mixture.

Step 6

Chill thoroughly before serving.
