Fruited Chicken Salad Recipe

Step 1

Toss chicken with soy sauce. Let stand 15 min. Mix fruit with celery, add chicken. Mix again. Chill. Blend dressing: 6 tb low fat yogurt, 5 tb low cal. mayonnaise, 4 tb skim milk, 2 packets equal, 1/4 tb pumpkin pie spice.

Step 2

Arrange fruited chicken salad on lettuce (about 1 cup each) on lettuce leaves. Spoon dressing over salad.

  • 2c Cooked Diced Chicken OR Turkey
  • 2tb Soy Sauce
  • 1c Diced Apples
  • 1c Orange Sections
  • 1/2c Halved Green Grapes
  • 2c Chopped Celery
  • Lettuce Leaves
