Mexican Cornbread Recipe

Overview

This Cornbread with melted cheese, eggs and shortening makes it very creamy. You'll love this.

Step 1

Preheat oven to 350 degrees.

Step 2

In a medium bowl mix together cornmeal, eggs, baking soda, melted shortening, milk, and salt. Mix well.

Step 3

In a skillet over medium-low heat brown ground beef; drain.

Step 4

Grease a 9" baking pan. Add half the batter, then sprinkle on the cooked ground beef, chopped onions, finely chopped jalapenos, and grated cheddar cheese. Cover with the remaining batter and bake for about 45 minutes.
