Harvard Beets Recipe


From The Parade Cookbook (Simon & Shuster)

Step 1

Drain beets; save 1/4 cup of the liquid.

Step 2

Melt butter, blend in flour. Add 1/4 cup of beet juice, cook, stirring constantly, until thickened.

Step 3

Add remaining ingredients, stir until sugar dissolves. Add drained beets. Heat to serving temperature.

  • 1can sliced beets (1 pound
  • 2tablespoons butter
  • 2tablespoons flour
  • 1/4cup beet liquid from can
  • 1/3cup firmly packed brown sugar
  • 1/4cup vinegar
  • 1/2teaspoon salt
  • pepper
  • 1/8teaspoon cloves
