Berry Scones Recipe


A healthy and a tasty scone to have at breakfast with cream tea. The varied taste of berries is just great.

Step 1

In a mixing bowl, combine flours, baking powder and sugar. Cut in butter until mixture resembles fine crumbs.

Step 2

Beat half and half with egg yolk. Add to crumb mixture. Stir with fork just till moistened. Gently fold in berries.

Step 3

Turn out on floured surface and knead gently about 6 times to form a ball. Pat into a circle about 3/4" thick. Carefully place on greased cookie sheet.

Step 4

Use sharp knife to mark 8 wedges. Don't cut all the way through. Sprinkle with sugar.

Step 5

Bake at 425 degrees for 20 minutes or till slightly browned. Break into wedges and serve with soft butter.

Things You'll Need

  • 1 1 cup whole wheat flour
  • 1 1 cup unbleached white flour
  • 1 1 Tbl. baking powder
  • 1 1/4 cup sugar
  • 1 1/3 cup butter or margerine
  • 1 3/4 cup half and half
  • 1 1 egg yolk
  • 1 1 cup fresh berries (blackberries, blueberries or raspberries work well)
  • 1 additional sugar
