Tuscan White Bean Salad Recipe

Step 1

Combine the white beans, artichoke hearts, tuna, sun-dried tomatoes, olives and parsley.

Step 2

Stir together the pesto, balsamic vinegar and olive oil. Pour over the salad, mixing well. Season with pepper. Serve immediately, or refrigerate.

  • And coarsely chopped

  • Drained and flaked
  • 5 Sun-dried tomatoes (oil-
  • Packed), slivered
  • 1/3c Kalamata olives, pitted and
  • Coarsely chopped
  • 1/4c Chopped parsley
  • 3tb Pesto
  • 3tb Balsamic vinegar
  • 2tb Olive oil
  • Freshly ground black pepper
  • To taste
