Salsa Bean Soup Recipe


Easy black bean soup. Good served with Tortilla chips

Step 1

Saute minced garlic in olive oil for 1 minute. Then add water, chipotle chili powder, beans, and salsa. Bring to a boil, reduce heat, and simmer for 1 minute.

Step 2

Process 3 cups of the bean mixture in a blender until smooth. Return blended mixture to pan and add lime juice.

Step 3

Simmer 10 minutes, stirring often. Then remove from heat and add cilantro.

Step 4

Serve and garnish bowls with shredded cheese.

Step 5

This recipe serves four.

Things You'll Need

  • 1Tbsp minced garlic
  • 1tsp olive oil
  • 2cups water
  • 1/2tsp chipotle chili powder
  • 3 15 oz. cans black beans
  • 16oz. Hot Salsa
  • 1 juice of 1/2 a lime
  • 1/2cup chopped cilantro
  • 1/2cup shredded cheese
