Multigrain Buttermilk Bread -Machine Recipe

* NOTE: for larger loaf - 3 teaspoons of dry yeast for all machines except 1 1/2 pound Panasonic/ National machines (use 4 1/2 teaspoons yeast)

Step 1

Have all ingredients at room temperature, or warm liquid in microwave for 40 - 60 seconds on high.

Step 2

Place all ingredients in bread pan, select Light Crust setting, and press Start.

Step 3

After baking cycle ends, remove bread from pan, place on cake rack and allow to cool 1 hour before slicing.

-------------1 1/2 LOAF-----------------
  • 1/3c Cracked wheat
  • 1 1/4c Buttermilk OR 5 Tb of dry
  • Buttermilk powder and 1 1/4
  • C water
  • 1 1/2c Bread flour(Plus 2 tb flour)
  • 1 1/2c Whole wheat flour
  • 3tb Gluten
  • 2tb Wheat germ
  • 1/4c Cornmeal
  • 1 1/2ts Salt
  • 1 1/2tb Butter or margarine
  • 2tb Honey
  • 1/4ts Baking soda
  • 3ts Red Star active dry yeast *
------------1 POUND LOAF----------------
  • 1/4c Cracked wheat
  • 7/8c Buttermilk OR 3 tablespoons
  • Dried buttermilk powder and
  • 7/8 cup water
  • 1c Bread flour(plus 1 tb flour)
  • 1c Whole wheat flour
  • 2ts Gluten
  • 1 1/2tb Wheat germ
  • 3tb Cornmeal
  • 1ts Salt
  • 1tb Butter or margarine
  • 1 1/2tb Honey
  • 1/4ts Baking soda
  • 2ts Red star brand dry yeast
  • (FOR ALL MACHINES)
