Step 1

Preheat oven to 400°F. To prepare potatoes, scrub potatoes with soft brush under running water; rinse well. Pierce each potato in several places with fork. Bake 1 hour or until fork-tender. Cool completely, then refrigerate.

Step 2

When potatoes are cold, peel with paring knife. Grate potatoes by hand with large section of metal grater or use food processor with large grater disk.

Step 3

Heat butter in 10-inch skillet over medium-high heat until melted and bubbly. Press grated potatoes evenly into skillet. Do not turn or stir potatoes! Season with salt and pepper to taste. Cook 10 to 12 minutes until golden brown.

Step 4

Turn off heat; invert serving plate over skillet. Turn potatoes out onto plate. Garnish if desired. Serve immediately.

Things You'll Need

  • 1 4 large russet potatoes, about 6 ounces each. (prepare potatoes several hours or up to 1 day in advance)
  • 1 4 tablespoons butter or margarine
  • 1 Salt and pepper
  • 1 Cherry tomato wedges and rosemary sprigs for garnish
