Maque Choux Recipe


Authentic cajun recipe of sweet smothered corn and tomatoes in a rich cream sauce. The fresher the corn, the better.

Step 1

Sauté onions in butter till nearly clear. Add corn, tomatoes, and season to taste with salt, pepper, and Tony Chachere's. Stir and simmer for 20-30 minutes. Add cream or half-and-half to your preferred consistency. Simmer till heated through. If you make it too soupy, just serve it over rice or jambalaya.

Things You'll Need

  • 2bags extra sweet corn (or cut fresh corn off the cob)
  • 1large can diced tomatoes (or fresh tomatoes)
  • 1-2 sweet onions
  • 1/2 stick butter
  • heavy whipping cream or half-and-half milk/cream
  • salt
  • pepper
  • Tony Chachere's Creole Seasoning
  • 1can MILD Ro-tel tomatoes (more kick)
  • 1/2pound bacon, chopped (in place of butter)
