Broccoli Mushroom Bulgur Salad Recipe


A nice salad featuring bulgur, broccoli, mushrooms, and green onions.

Step 1

In saucepan, combine sugar, salt, paprika, celery seed, onion powder or onion flakes, vinegar and water and bring to boiling. Pour over bulgur and allow to steep for 45-60 minutes. Toss bulgur mixture with the mushrooms and broccoli and chill for 2 hours or overnight. Serve cold, sprinkled with green onion tops for garnish.

Things You'll Need

  • 1/4c Sugar
  • 1/2ts Salt optional
  • 1ts Paprika
  • 1ts Celery seed
  • 1ts Onion powder OR 2 ts Onion flakes
  • 1/3c Cider or wine vinegar
  • 3/4c Water
  • 1c Bulgur (cracked wheat)
  • 1 Head broccoli cut into florets
  • 1lb Mushroom thin sliced
  • 2tb Shredded/ finely chopped green onion tops
