Christmas Pasta Salad Recipe


A wonderful recipe made with vegetables and pasta. It is very easy to cook and has a great taste. An ideal salad to make during Christmas.

Step 1

Heat shallot and oil on stovetop over medium low heat for 5 min. Allow oil to cool back to room temp.

Step 2

Snap asparagus. Par boil in 1" simmering water covered 3-5 min. Cool underwater and drain.

Step 3

Cut in 1" pieces on angle and add to bowl with endive, red pepper, cooked pasta, parsely and green peas. Whisk vinegar in shallot oil and pour over. Salt and pepper.

Things You'll Need

  • 1 1 small shallot or 1/2 large shallot, finely chopped
  • 1 1/3 cup extra virgin olive oil
  • 1 1 lb thin asparagus spears
  • 1 2 endive, coved and thinly sliced
  • 1 1/2 small red pepper, chopped
  • 1 1/2 lb bow tie pasta, farfalle, cooked al dente and cooled
  • 1 1/2 cup frozen peas
  • 1 1/4 cup chopped flat-leaf parsely, couple of handfuls
  • 1 3 T white wine vinegar
  • 1 salt and freshly ground pepper
