Madison Avenue Potato Salad Recipe

Step 1

Blend together oil, vinegar, salt and pepper; pour over potatoes. Toss potatoes lightly; refrigerate.

Step 2

At serving time, add olives, eggs, celery, pickles, pimiento, onion, mustard and mayonnaise to potato mixture; toss.

Things You'll Need

  • 3tb Vegetable oil
  • 1tb Wine vinegar
  • 1 1/2ts Salt
  • 1/8ts Pepper
  • 2c Cooked, diced potatoes; warm
  • 1/2c Quartered ripe olives
  • 2 Hard-cooked eggs; sliced
  • 1c Thinly sliced celery
  • 1/2c Diced dill pickles
  • 1/4c Diced pimiento
  • 1ts Grated onion
  • 1tb Mustard
  • 1/3c Mayonnaise
