Vegetable Curry Recipe

Step 1

Cut the vegetables into similar size pieces so they cook evenly.

Step 2

Heat the oil in a medium pan. Add the onions and cook over medium heat for 10 min or untill browned, stirring often.

Step 3

Add the garlic, ginger, garam masala, (& all the spices) tomatoes, pineapple juice & salt, and bring to a simmer, stirring. Add all the vetables, cover and cook over medium heat for 15 min, or untill just tender.

  • 1 1.5 lb vegetables (Such as cauliflower, potatoes,carrots, green beans
  • 1 3 tbsp veg oil
  • 1 2 Medium onions, peeled and chopped
  • 1 1 Large garlic clove, peeled and crushed
  • 1 1in piece of fresh ginger peeled & finely chopped
  • 1 1 tbsp garam masala
  • 1 * Cumin, Coriander, Cardamon, Cloves, Cinnamon, Pepper, Mace & Bay
  • 1 14oz Canned, chopped tomatoes
  • 1 3/4 Cup pineapple juice
  • 1 salt
