Bruschetta with Roasted Garlic Recipe


Fast and easy. Goes well with spaghetti or soups

Step 1

Preheat oven to 350

Step 2

Brush unpeeled garlic cloves with one tablespoon oil and place in a small baking dish

Step 3

Roast garlic until soft when pierced about 15 minutes. Cool, peel and mash.

Step 4

Combine garlic, remaining one tablespoon oil and herbs in a large bowl.

Step 5

Stir in tomatoes and refrigerate for up to 2 hours

Step 6

Slice Bread into 1" slices and toast both sides under broiler

Step 7

Top toasted bread with tomato mixture and serv

Step 8

HINT: garnish with fresh italian parsley or fresh basil leaves and salt and pepper to taste

Things You'll Need

  • 8cl Garlic
  • 2Tbs Olive oil
  • 1tsp Marjoram dried
  • 1tsp Basil dried
  • 1/2tsp Thyme dried
  • 4lb Tomatoes, peeled and diced
  • 1loaf French bread
