Chicken Tortilla Soup Recipe

Overview

A GREAT tortilla soup. Fresh lime juice and cilantro make this recipe!!

Step 1

Throw everything except garnishes in the crockpot and cook on high for 5-6 hours.

Step 2

Dress with garnishes and enjoy.

Step 3

If not using a crock pot, sauté garlic & onion in 2 T. olive oil before adding remaining ingredients. Simmer this for at least an hour.

Things You'll Need

  • 1 1 (46 ounce) can chicken broth -------- I only used 36 ounces
  • 1 1 (2 oz.) tomato sauce ------------ I omitted
  • 1 1 (15 oz) can diced tomatoes
  • 1 3 C. shredded cooked chicken
  • 1 2 anaheim chilies, diced
  • 1 1 jalapeno pepper, diced sauce
  • 1 1/2 C. diced onion
  • 1 2 cloves garlic, minced
  • 1 2 T. minced cilantro
  • 1 1 T. chili powder
  • 1 2 t. cumin
  • 1 2 t. pepper
  • 1 1 t. salt
  • 1 2 t. Tabasco sauce (regular or chipotle)
  • 1 1/2 t. chipotle pepper (optional)
  • 1 Garnishes:
  • 1 1 C. shredded cheddar cheese
  • 1 1 avocado, chopped
  • 1 1/4 C. cilantro, pulled from stem
  • 1 1 lime, cut into wedges
  • 1 2 C. crushed tortilla chips
