Avocado Shrimp Salad Recipe

Step 1

Cut avocado length wise and remove nut

Step 2

Salt avocado generously, to prevent blackening

Step 3

Mix mayo, ketchup, oil, cut cilantro, pinch of salt and pepper to taste. 5 minutes before serving: dip shrimp in sauce and place in halved avocado. Pour remaing sauce over each avocado. Salt and pepper to taste. Garnish with shrimp tails and cilantro.

Things You'll Need

  • 2 ripe avocados
  • 1cup boiled shrimp, deveined and peeled (save 6-8 tails)
  • Cilantro, chopped and whole leaves
  • 2tsp mayonaisse
  • 1tsp oil
  • 1tsp ketchup
  • 1/2 lemon
  • salt and pepper to taste
