Mint Lemonade

 

If you want the taste of freshly squeezed lemonade without all the fuss, start with 100% frozen fresh lemon juice.

Total prep time: 5 minutes plus standing
Degree of difficulty: easy

4 cups water, divided
1 cup sugar
1 bunch fresh mint, divided
2 cups ice cubes
1 container (7.5 oz.) frozen fresh lemon juice, thawed

Bring 1 cup water and sugar to boil in small saucepan over medium heat. Cook until sugar dissolves, 3 to 5 minutes. Add one half bunch mint to sugar syrup; cover and let stand 30 minutes. Fill large pitcher with ice. Strain syrup into pitcher; discard mint. Stir in remaining water, remaining 1/2 bunch fresh mint and lemon juice. Makes 7 cups.

Place 2 scoops of ice cream in each of 6 bowls. Drizzle each sundae with sauce; garnish with mint sprigs.
