Arugula And Red Onion Salad Recipe

Overview

A simple salad of arugula leaves and red onion is topped to perfection with a light vinaigrette.

Step 1

Pick over the arugula leaves and remove and discard any tough stems. Rinse and drain the leaves. Pat dry. Place the leaves in a salad bowl. Add the onion slices, garlic, vinegar, oil, salt and pepper. Toss and blend well. Serve.

  • 3/4lb Arugula leaves
  • 1md Size red onion cut into thin slices
  • 1ts Finely chopped garlic
  • 1tb Red-wine vinegar
  • 3tb Olive oil
  • Salt and fresh ground pepper
