An onion and beef broth based soup with cheese as toppings.The rich flavor of the base is not due just to the broth, but to the browned onions. Enjoy this great soup.
Melt butter and saute onions over medium-low heat until soft and golden brown. Add beef stock and simmer 10 minutes. Whisk in grated cheese and season to taste.
Option:
Pour into oven proof crocks , top with a slice of toasted french bread and sliced or grated swiss cheese, broil until cheese melts.
