Baba Ghannouj Recipe


Eggplant and Tahini (sesame paste) dip.

Step 1

Steam eggplant until tender, about 8 minutes.

Step 2

Place cooked eggplant in food processor. Add Tahini (sesame paste), lemon juice, and garlic. Puree.

Step 3

Stir in remaining ingredients; spoon into serving bowl. Garnish with parsley sprig. Serve warm or chill. Makes 2 cups.

HINTS: - Select smaller eggplants since they have thinner peels and a sweeter flavor.

Things You'll Need

  • Med Eggplant, peeled and cut into 1/2
  • 1/4c Tahini
  • 1tb Lemon juice
  • Clove garlic
  • 1/4ts Black Pepper
  • 1ds Ground Cumin
  • 2tb Sesame seeds
  • 2tb Finely chopped fresh Parsley
