Low-Fat and Sugar Zucchini Bread Recipe

Overview

You can barely taste the hidden zucchini in this recipe, which makes it a perfect way to get kids to eat their vegetables. It is moist, sweet, and flavorful- not to mention easy to make! Use it for breakfast, dessert, accessory to a meal, or a snack.

Step 1

Beat eggs, splenda, vanilla and applesauce until fluffy.

Step 2

Add zucchini, then dry ingredients.

Step 3

Stir in pineapple, raisins and nuts.

Step 4

Bake in three very well greased and floured 8x4" loaf pans for 1 hour at 325 degrees.

  • 1 3 eggs
  • 1 1 1/2 cups splenda or other sugar substitute
  • 1 2 tsp. vanilla
  • 1 1 cup applesauce
  • 1 2 cups grated zucchini
  • 1 3 cups flour
  • 1 1 tsp. baking powder
  • 1 1 tsp. soda
  • 1 1 tsp. salt (optional)
  • 1 1 cup crushed pineapple, drained
  • 1 1 cup chopped nuts
  • 1 1/2 cup raisins
