Mediterranean Lemon Rice Soup Recipe

Overview

Creamy, thick and rich Lemon Rice Soup. Try this soup for supper, you will not get over how quick and easy it is to prepare and everyone will love it!

Step 1

In large Soup pot saute Onion and Garlic in the Olive oil for about 3 minutes; Add Celery Salt, Parsley, Lemon Zest, Salt and Pepper, Dry White Wine, Stock and Boullion Cubes.

Step 2

Let Simmer on Medium. Do Not Let Boil. Turn down if Necessary.

Step 3

In seperate bowl; Wisk Egg and Juice and Pulp from Lemon(avoiding seeds), Continue to Wisk while pouring 2 Laddles of soup mixture into bowl, Then wisk into Soup Pot.

Step 4

Add Instant Rice

Step 5

Cover and Simmer (Not Boil) for 1/2 Hour

Step 6

Enjoy

Things You'll Need

  • 1 6 Cups Chicken or Vegetable Stock
  • 1 2 Boullion Cubes (Chicken or Vegetable)
  • 1 1 Small White Onion (finely chopped)
  • 1 2 glarlic cloves (finely chopped)
  • 1 1 Large lemon (or 2 small)
  • 1 1 Tsp Lemon Zest
  • 1 1 Large Egg
  • 1 1/2 Cup Dry White Wine
  • 1 1 Tsp Celery Salt
  • 1 1 Tbsp Parsley
  • 1 2 Tbsp olive oil
  • 1 8 oz Instant Rice
  • 1 Salt and Pepper to taste
