Tabouli is a Mediterranean salad dish, often used as part of a mezze. Its primary ingredients are bulgur, finely chopped parsley, mint, tomato, scallion (spring onion), and other herbs with lemon juice and various seasonings, generally including black pepper and sometimes cinnamon and allspice.

Step 1

Soak bulgur in enough fresh water to cover for 10 minutes. Drain well. Set aside while you prepare the other ingredients. Wheat should be soft and chewy.

Step 2

Chop the parsley using kitchen shears, holding the parsley tightly in your hand like a bouquet. Stop when you reach the large stems.

Step 3

You can chop the green onions the same way, but you'll have to dice the bulb part with a knife.

Step 4

Drain the excess liquid from the diced tomatoes before adding to the wheat, so the wheat isn't discolored.

Step 5

Add all of the ingredients, adding more or less lemon juice according to your taste.

Step 6

Prepare the salad at least one hour before serving, so the ingredients blend together.

Step 7

Store covered tightly in the refrigerator for several days.

  • 1 8oz Cracked Wheat (Bulgar)
  • 1 2 1/2 C
  • 1 finely chopped fresh parsley
  • 1 1/2 C
  • 1 finely chopped green onions
  • 1 2 C
  • 1 finely chopped tomatoes
  • 1 1 TBSP
  • 1 finely chopped mint (optional)
  • 1 1 TSP
  • 1 salt
  • 1 1/2 TSP
  • 1 black pepper
  • 1 1/2 - 3/4 C
  • 1 fresh lemon juice (do not use concentrate!)
  • 1 3/4 C
  • 1 oil
