Red Cabbage Cole Slaw Recipe

Overview

A light and tasty salad to have in summers with the great taste of crunchy vegetables. An olive oil and vinegar dressing make this coleslaw a healthy choice.

Step 1

Shred cabbages, chop onion and green onion and crush garlic.

Step 2

Mix the dressing together and stir into cabbage mixture.

Step 3

Toss in the cranberries and walnuts just before serving.

Step 4

Can be refrigerated the night before.

Things You'll Need

  • 1 1/2 head red cabbage shredded
  • 1 1/2 head green cabbage shredded
  • 1 1/2 red onion chopped
  • 1 2T. green onion
  • 1 1 garlic clove crushed
  • 1 1/4 cup walnut halves
  • 1 1/2 cup dried cranberries
  • 1 dressing:
  • 1 1/4 cup extra virgin olive oil
  • 1 1T. balsamic vinegar
  • 1 1T. red or white wine vinegar
  • 1 1T. sugar
  • 1 1 t. cumin ground
  • 1 salt and fresh ground pepper to taste
