Acini de Peppe Salad Recipe


Acini de Peppe Salad is a wonderful cold fruity sweet dish that is so good that you really can't resist it. If you're looking for that special dish - try this recipe. Acini de Peppe is small peppercorn shaped pasta.

Step 1

Combine sugar or splenda, flour and salt.

Step 2

Stir in pineapple juice, eggs and lemon juice.

Step 3

Cook over moderate heat or in microwave, stirring occasionally, until thickened. Cool.

Step 4

Boil water, oil and salt and add Acini de Peppe. Cook for 12 minutes.

Step 5

Drain and rinse and drain again. Cool.

Step 6

Combine with egg mixture.

Step 7

Add drained fruit and whipped topping before serving.

Things You'll Need

  • 1cup sugar or splenda
  • 2tbsp flour
  • 1/2tsp salt
  • 1-3/4cup pineapple juice
  • 2 eggs, beaten
  • 1tbsp lemon juice
  • 3qts water
  • 1tbsp extra virgin olive oil
  • 2tsp salt
  • 116 oz pkg Acini de Peppe Pasta
  • 3cans - 11 oz orange segments (drained)
  • 2cans - 20 oz pineapple chunks (drained)
  • 1can - 20 oz crushed pineapple (drained)
  • 19 oz container nondairy whipped topping
1 Optional: 1 cup miniature marshmallows & coconut (if you eat it right away and not store in fridge for several days.)
