Can Zucchini be Frozen?

Zucchini stores well when frozen. Prepare tender, young zucchini in the finish form you will need by slicing or grating. Dip in boiling water or steam for two minutes. Allow to cool, seal in airtight freezer bags and freeze. When thawed, discard any liquid before using.
