Butternut squash is both nutritious and delicious, and it is an even healthier dish when you process the squash yourself. If you find yourself shying away from butternut squash simply due to the fact that it seems like too much work to peel and prepare it, you can throw that excuse out the window. Peeling butternut squash can be done quickly and easily, which allows you to prepare it and have it on the table in no time.
Lay the squash on the cutting board, and cut both rounded ends off the squash at the tips where it just begins to curve.
Take a vegetable peeler and lay the squash down or hold it upright, whichever position you find most comfortable.
Peel the outside rind of the squash off with the vegetable peeler, peeling from top to bottom. Rotate the squash and continue peeling until it is complete.
Take a sharp knife and cut down the center of the squash, lengthwise.
Scoop out the inner seeds and stringy flesh, and the squash is now ready to cook.
