How to Make Zucchini Fritters

Getting your kids to eat their veggies is not always easy, so a parent must be creative in their presentation. Whether you are a zucchini lover or not, you'll love these tasty zucchini fritters that match the goodness of veggies and the crunch of a fritter. Ready to get your zucchini on? Here's how.
Wash zucchini and grate until you have about 4 cups. Place in a strainer and salt to get rid of some of the water content.
Finely grate small onion.
In a medium bowl, beat the 3 eggs.
Stir in the Dijon mustard, flour and Parmesan cheese.
Fold in the zucchini and onion.
Preheat your 10-inch pan and add 1 tablespoon of olive oil. Heat.
Add the fritter mix. Spoon 1to 2 tablespoons of mix per fritter. Fry in small batches.
Add more oil as necessary as you work. Drain fritters on paper toweling before serving.
Serve with a picante or spaghetti sauce.
