The world is very health conscious these days and more people want to eat vegetarian dishes but are afraid they will not taste good or are not easy to make. Making Spicy Bean Hot Pot

Step 1

Place the pot on the stove and preheat to high.

Step 2

Add the oil until hot then add the garlic and onion. Stir them until the onions are translucent.

Step 3

Stir in the dry spices (cumin, chili powder and cayenne) and saute for another 1-2 minutes.

Step 4

Add the tomatoes, tomato paste, and hot pepper sauce. Stir well and bring to a simmer. This will take about 5 minutes.

Step 5

Add the beans and fold in well. If too dry add a little bit of water.

Step 6

Cook until the beans are thoroughly heated, about 15 minutes, stirring periodically.

Step 7

Taste and season with salt, pepper or additional spices as needed.

Step 8

Scoop into a warm bowl and top with cheddar cheese and enjoy.

Tips and Warnings

Adjust heat as you like by adding more Tabasco sauce. Cheddar Cheese helps bring down the heat of the spices as does Sour Cream. Serve with a Baked Potato or Over Rice. Less spice is better to start as you can always add more. As always, when cooking, use the utmost care to not burn yourself. When cooking with oil always be careful to not "throw" items into it, instead place in the oil with a slotted spoon or spatula.
