Need gravy, but prefer the vegetarian version? There's still a way to get that flavorful sauce you love to pour over rice or potatoes. A handful of mushrooms do the trick.
Heat olive oil on medium heat. Add onions and mushrooms. Saute for 6 to 7 minutes, stirring as needed.
Add vegetable broth and tamari or soy sauce.
Stir in flour, a little at a time. Beat or whisk thoroughly to prevent lumps. Reduce heat to low and simmer.
Add seasonings and simmer for 10 to 15 minutes, stirring uncovered. Serve over rice or potatoes.
