Strawberry Sauce

This is a simple method for concentrating strawberry flavor. Serve over ice cream, waffles, yogurt or mix with fresh strawberries for the strawberry-est strawberry shortcake!

1 1/4 lbs. fresh California strawberries, frozen overnight
1 tbls. lemon juice
1/2 cup fruit juice concentrate or
1/4 cup honey

DIRECTIONS: Strain frozen strawberries in a colander over a bowl till you have at least 1 cup of juice. Boil down to 1/4 cup, stir in the lemon juice and fruit concentrate or honey. Puree in a food processor or blender, along with the pulp.

GARNISH: 1 basket California strawberries
