Healthy Breakfast Meals

Overview

It's often said that breakfast is the most important meal of the day, but not any breakfast will do. A healthy breakfast should be low in fat and calories, fill you up and taste good. Try something besides cold cereal or toast and coffee to get your day off to a good start.

Healthy omlets

Mix 1/2 cup of egg substitute with a splash of milk. Pour into a frying pan sprayed with cooking spray and cook over medium heat until almost set. Add chopped peppers, shredded low-fat cheese and cubed Canadian bacon. Fold in half to cover the filling ingredients and finish cooking. Serve with whole wheat toast and fresh fruit.

Filled oatmeal

Prepare oatmeal according to directions. Before serving, mix in a combination of fruits and nuts to your taste. Try dried cranberries and walnuts, bananas and pecans, raspberries and blueberries or apples, raisins and cinnamon. Serve with turkey bacon or sausage.

Healthy Belgian waffles

Toast two high-fiber frozen waffles until brown and crispy. Top with a mixture of strawberries, raspberries and blueberries, then finish with fat-free whipped topping. Serve with Canadian bacon slices for a decadent weekend breakfast treat.

Breakfast burritos

Stir together 1/2 cup of egg substitute with a splash of milk. Spray a frying pan with cooking spray and pour in egg mixture. Cook until almost set, then add chopped peppers and low-fat shredded cheese. Heat a flour tortilla in the microwave until warm. Fill with the egg mixture, then top with salsa and fat-free sour cream. Roll into a burrito shape and serve.

Breakfast parfaits

In a pretty glass, layer yogurt, chopped fruit and granola. Repeat the layers until the glass is filled and serve with whole wheat toast and turkey bacon.
