Whole wheat and bran in the form of breakfast bars add a fiber boost to your day. Carrot and cinnamon give these bars a sweet and slightly spicy flavor that makes them appetizing for children as well as adults. You can serve the bars as a healthy dessert with homemade ice cream, or you can have them alone as a snack. Pour the bran cereal, carrots, milk and yogurt into a large bowl.
Let the bowl sit for 5 minutes.
Pour the whole wheat flour, baking powder, cinnamon, baking soda and salt into a separate mixing bowl.
Use a whisk to incorporate the egg and honey into the milk, carrot, bran and yogurt mixture.
Pour the dry ingredients into the milk mixture, and stir once or twice with the whisk until the dry ingredients are barely mixed.
Pour the mixture into a greased pan, and bake at 375 degrees for 30 minutes.
Let the contents of the pan cool on a baking rack.
Cut the cooled block into 3-inch wide bars, and serve with vanilla yogurt.
