Overview

A dairy-free lifestyle can be tricky to maintain. It requires elimination of all sources of dairy from the diet including butter, milk, yogurt, sour cream, cheese and milk proteins such as whey. The elimination of such ingredients can make cooking a difficult process. Thankfully, with a few minor modifications, recipes such as cornbread can be accomplished without the use of dairy.

Step 1

Preheat the oven to 400 degrees Fahrenheit.

Step 2

Combine all ingredients in a medium mixing bowl and stir until moist.

Step 3

Pour the mixture into a baking dish that has been sprayed with non-stick cooking spray.

Step 4

Bake for 25 minutes or until the edges are light brown.

  • Canola oil, 4 tbsp.
  • Yellow cornmeal, 1 cup
  • Stone-ground cornmeal, 1/2 cup
  • Creamed corn; 13 oz.
  • Baking powder, 2 tsp.
  • Salt, 1 tsp.
  • Cracked black pepper, 1/2 tsp.
  • Cultured coconut milk, 8 oz.
  • Rice milk, 3/4 cup
  • Eggs, 2
  • Medium mixing bowl
  • Spoon
  • Non-stick cooking spray
  • Baking dish
