A raw food diet is a plant-based diet that promotes uncooked and unprocessed foods, such as organic fruits, vegetables, nuts and sprouted grains. A raw food diet can be fulfilling and exciting. You can enjoy many of the same cooked foods that you've grown accustomed to eating, such as pizza, tacos and burgers. Made from natural sweeteners and all-natural cocoa powder, raw food chocolate cake is one of the delicious desserts that can be enjoyed on this diet. This healthy chocolate cake can be eaten for breakfast, lunch or dinner.
Place the walnuts in a food processor fitted with an S blade and process until smooth.
Add 16 pitted dates, 1 cup cocoa powder and 1/2 tsp. vanilla extract to the walnut mixture in the food processor. This is the bulk of your cake mix. Process until the mixture begins to stick together. Add 4 tsp. water and process for 30 seconds.
Remove the cake mixture from the food processor and shape it as desired. Transfer the cake to a serving plate.
Place 3/4 cup dates and 1 tsp. vanilla extract in the food processor fitted with the S blade to start making the frosting. Process until smooth.
Add avocado, cocoa powder and coconut. Process until creamy. Scrap the sides of the food processing container with a spatula as needed. Add water and process until you achieve the desired consistency (15 to 30 seconds). Spread the frosting over the cake.
