There are three different species and several hybrids of dragon fruit, or pitaya, as it is known in Central and South America. The exotic fruit is usually a deep pink color on the outside with green leaves, and is inedible. The skin of the fruit is inedible. This member of the cactus family can be dark red, pink or white on its edible inside.
Put dragon fruit on the cutting board.
Slice the fruit from end to end with a knife.
Scoop the flesh from the skin with a spoon by putting the spoon between the flesh and the skin of the fruit and sliding it around the fruit. There should be no pink skin on the flesh.
Pull the flesh out of the skin and place it on the cutting board.
Slice the flesh into cubes.
Put the cubes of fruit into a fruit salad or arrange them in the dragon fruit skin for a stunning display.
