Fragrant Coffee Flavored Olive Oil

If you want to try an innovative and delicious oil to serve at your next dinner party, try this method of making a coffee-scented oil to serve with your bread and cheese platter. It is reminiscent of the tropics yet warming and full-bodied in flavor. There is no need to spend a lot of money for real coffee oil when you can make a good substitute yourself.
Sterilize a mason canning jar and lid with hot soapy water and allow to dry thoroughly. Find a place in your cupboard that is in a cool and dark place where it can sit for a few weeks or months undisturbed. The ideal setting would be a wine cellar, but between 57 and 70 degrees is good.Of course, if you do not have a canning jar, you can use any glass jar that has a good tight lid, even porcelain is a good choice if has no cracks.
Grind your coffee beans as finely as possible and pour directly into your oil. A ratio of 1:8 will produce a nice flavor without being too bitter. In other words, if you use a 1/4 cup of finely ground coffee beans, use 2 cups of extra virgin olive oil. Cover the jar tightly and shake until the coffee is suspended in the oil.
Place the jar in a paper bag and close it by folding it down like a lunch bag.. Mark the bag with the date and contents so you won't forget when you find it later. Leave it alone for at least 4 weeks, preferably longer. This will allow the natural oils of the coffee to be released into the olive oil.
Remove the container from its hiding place very carefully after the elapsed time, trying not to jostle it. The coffee grinds will have sunk to the bottom of the container. Very slowly and carefully, pour the clear oil on the top into a clean nonreactive container. Stop pouring when the grounds start to move and pour the rest through a coffee filter. It will take a while to drip through. Pour all the oil back into a clear serving jar, like a colored wine bottle.
Serve the coffee-fragrant oil with your next bread and cheese. Other ideas for serving are grilled lightly-flavored fish, poached eggs, or raspberry sorbet.
